Brownies are my biggest weakness. Not just any brownies, though. I won’t blink an eye for your betty crocker box mix. Okay maybe I will. But It’s the homemade goodness that really gets me. The chewy, gooey, fudgy brownies that stick to your fingertips and the roof of your mouth. Fresh from the pan and chased with a cold glass of milk. THOSE brownies. Are my weakness. It doesn’t matter if I have been dieting for 29 days and I am 8 hours away from meeting my goal….you take a pan of homemade brownies out of the oven and that’s the end of me.

A good paleo brownie recipe is literally the first thing I knew I had to get down when I started my paleo journey. And that’s because brownies also happen to be my husband’s weakness. He will casually toss brownie ingredients into the buggy when I shop without saying a word….which is his way of asking me to make some. And I could NOT do that until I made some I knew I could eat. My tummy would be in big trouble. Thankfully they werent too hard to convert to paleo. Over the years I have tweaked the recipe here and there. I’ve made a lot of versions, some better than others. I’ve become familiar with which ingredients I prefer to work with….and those I don’t care for at all.

A couple of weeks ago I worked up something new with my favorite paleo-friendly flour, Otto’s Cassava Flour. They turned out to be the best durn paleo brownies ever to graze my lips. These things are the real deal. My husband, who has no problem telling me when my paleo baking “tastes like dirt” (although he confuses things like taste and texture…) thoroughly enjoyed these fudgy delights and admitted that they didn’t taste paleo at all. Thank you, Dear.

If you havent noticed, it has been a minute since I had the opportunity to share a recipe with you. We had some issues with our internet provider, who made several unauthorized transactions on our account, causing our bank to overdraft and my face to turn 50 shades of red. Needless to say, we no longer do business with said internet provider and I am currently without, until I find someone else who wants to provide for us out in the boonies. And not steal. Today, I spent my ONE CHILDLESS DAY at my mom’s house typing up this amazing Paleo Fudge Brownie recipe to share with you, because it is too good not to share, and I love you.

Paleo Fudge Brownies

Ingredients
  • 1 C Enjoy Life Chocolate Chips
  • 5 TB butter or palm shortening, softened
  • 1 C coconut sugar
  • ¼ C Otto's cassava flour
  • 2 TB cocoa powder
  • ¼ tsp sea salt
  • 2 eggs
  • 1 TB vanilla
Instructions
  1. Preheat oven to 350.
  2. In a large mixing bowl, cream together butter and sugar.
  3. Add eggs and vanilla, and stir well.
  4. In a separate bowl, combine flour, cocoa, and salt.
  5. Add mixture to your wet ingredients and mix well.
  6. Fold in chocolate chips.
  7. Spread batter into a glass baking dish, and cook for 20-25 minutes.
