Soft and Chewy Chocolate Chip Cookies

March 30, 2020

When I think about chocolate chip cookies, it’s impossible not to smile. My thoughts are flooded with images of childhood. Sitting on the counter licking the beater, my mom carrying two big plates full of warm cookies to the living room. One plate full of cookies with nuts for my Daddy, and one without nuts for my brother and I. Dunking my entire fist full of cookie down into my milk glass and sucking all of the milk and chocolate off my fingers.

Cranberry Pecan Butternut Squash Noodles

October 3, 2018

Butternut squash is one of my favorite ingredients year-round. I use it regularly to make a breakfast hash with some sausage and topped with a fried egg. I love working with this squash because you can go in so many different directions, flavor wise. …

Blackened Catfish & Cilantro Lime Garlic Butter

May 22, 2018

Catfish is such an underrated fish. When I told my husband we were having catfish for dinner, he gave me a look that expressed he was questioning my sanity. When most people hear “catfish”, they immediately think “fried”. But let me tell you, when treated properly, the are other ways to enjoy catfish. And my favorite of these is blackened and grilled….

Tomato Basil Chicken Thighs

May 2, 2018

I had a severe craving for some pizza this past weekend. My husband has been wanting some too, but we both knew that we would feel awful afterwards. So I decided to infuse my favorite pizza flavors into some chicken instead. It turned out exactly how I had hoped….

Chomps Snack Sticks – product review

October 28, 2017

“Busy” does not even begin to describe my lifestyle these days. Between homeschooling, running two businesses, and treating an autoimmune disease, I am always on the go. When I shop for my family, healthy snacks that we can eat on the run are a must. Healthy and convenient don’t always go hand in hand, and most of the time there is a lot of prep work involved. Thankfully, that is not the case with Chomps Snack Sticks! …

Gluten Free Sausage Balls

August 19, 2017

I am a firm believer that finger foods are one of God’s gifts to busy mothers. There is simply nothing more convenient than a good finger food when you are starving on the run. And mothers are always always on the run. I can honestly tell you that there are many days when my little ones were infants that I would have gone all day without eating had there not been any food in the house that I could just grab with one hand. I made sure to stock up on things like berries and nuts and olives to get me through breastfeeding marathons. But my favorite things to snack on were meats and cheeses….

Paleo Fudge Brownies

October 5, 2016

img_20160916_164705

Brownies are my biggest weakness. Not just any brownies, though. I won’t blink an eye for your betty crocker box mix. Okay maybe I will. But It’s the homemade goodness that really gets me. The chewy, gooey, fudgy brownies that stick to your fingertips and the roof of your mouth. Fresh from the pan and chased with a cold glass of milk. THOSE brownies. Are my weakness. It doesn’t matter if I have been dieting for 29 days and I am 8 hours away from meeting my goal….you take a pan of homemade brownies out of the oven and that’s the end of me….

Venison Carne Asada Tacos – Paleo & GF

September 15, 2016

Taco Tuesdays are my favorite day of the work week. I always make tacos once a week because 1. They are tasty, 2. They are easy, 3. They are tasty, 4. They are inexpensive, and 5. They are tasty. There are infinite ways to make a taco, so I never get tired of them. Whether it’s beef tacos, pork tacos, fish tacos, chicken tacos, spaghetti tacos, I love them all. These tacos, however…these are the best….
