Catfish is such an underrated fish. When I told my husband we were having catfish for dinner, he gave me a look that expressed he was questioning my sanity. When most people hear “catfish”, they immediately think “fried”. But let me tell you, when treated properly, the are other ways to enjoy catfish. And my favorite of these is blackened and grilled….
Tomato Basil Chicken Thighs
I had a severe craving for some pizza this past weekend. My husband has been wanting some too, but we both knew that we would feel awful afterwards. So I decided to infuse my favorite pizza flavors into some chicken instead. It turned out exactly how I had hoped….
Venison Carne Asada Tacos – Paleo & GF
Taco Tuesdays are my favorite day of the work week. I always make tacos once a week because 1. They are tasty, 2. They are easy, 3. They are tasty, 4. They are inexpensive, and 5. They are tasty. There are infinite ways to make a taco, so I never get tired of them. Whether it’s beef tacos, pork tacos, fish tacos, chicken tacos, spaghetti tacos, I love them all. These tacos, however…these are the best….
The Mystery of The Lost Recipe – AIP White Chicken Lasagna
We are a book loving family. My kids could entertain themselves all day long in an empty room with a stack full of books. I was so excited when I found this book by Healthy Kids Publishing. The Mystery of The Lost Recipe is a cute story about a town restaurant that has lost it’s special Lasagna recipe. Some local kids take it upon themselves to investigate and locate the recipe for the owner. This fun story encourages healthy eating, as well as exercise. There is nothing better than finding a good book that reinforces exactly what I am teaching my little ones.

Grilled Redfish
The number one benefit of having a husband that loves to go fishing is all the fresh fish I get to eat! Mostly it’s bass or crappie, considering we live in Georgia. But once or twice a year we get to stock our freezer with some delicious ocean fish. Every year he competes in a tournament, and whatever he catches and cleans he gets to bring home to me. Flounder is probably my favorite, but another great one that we get lots of is Redfish….
Pan Seared Pork Chops with Cherry Fig Chutney
Y’all know I am all about some quick, easy cooking. It’s pretty much a requirement when you are a mother of toddlers. While it certainly looks and tastes like you spent hours on this dish, it’s done in under twenty minutes! No sacrifice in flavor here. And the best news is, even my pickiest child devoured it.

Paleo Fish Tacos
Tacos are one of the easiest dinners to throw together on a busy day. There are so many different versions to make, and my family loves them all! Normally I let the rest of the bunch go to town on the tortillas while i make myself a taco salad or lettuce wrap. But when I was planning these fish tacos for dinner, I really had a hankering for a crispy crunchy taco shell.

Paleo Venison Stroganoff
We had a lick of summer this week, with sunshine and temperatures so high I was in my shorts getting eaten up by mosquitos. Apparently it was just a tease. The week ahead of us is full of rainy freezing winter weather. But spring will be here before we know it, according to Phil….
Paleo Butternut Squash Venison Casserole
Last deer season, when we were still taking our deer to the processor, we decided to have one entire deer ground into sausage. We had two more made into steaks, roasts, and ground, and our freezer was packed. But all of it seemed to disappear much more quickly than the sausage. As much as we love it, I just couldn’t think of as many uses for it as the other more versatile cuts of meat. I make my Venison Sausage and Tomato Pasta pretty regularly, because it’s my husband’s favorite. Aside from that, I just don’t cook with it as much as I had expected to. Now that hunting season has rolled around again, I needed to get the last few packs cleared out of the freezer to make room for this year’s harvest. This week I decided to get crafty with it….
