Paleo Pumpkin Spice Donut Holes

Ingredients
  • 2 eggs
  • 1 C coconut sugar
  • ½ C coconut oil
  • 1¼ C pumpkin puree
  • ⅓ C coconut milk
  • 1 tsp vanilla
  • 1 C coconut flour
  • ¾ C TB tapioca flour
  • 3 TB potato starch
  • 1 tsp xanthan gum
  • 1½ tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 tsp ground cinnamon
  • ½ tsp ground cloves
  • ½ tsp ground nutmeg
Instructions
  1. preheat cakepop or donut hole maker.
  2. In a large mixing bowl, beat eggs and sugar.
  3. Add vanilla, pumpkin, and coconut oil. mix well.
  4. In a separate bowl, combine remaining ingredients.
  5. Fill each hole with a TB of batter and cook about 4 minutes, until machine stops steaming.
  6. Open and wait about 1 minute before removing.
