Ingredients
  • FOR STRAWBERRY CUPCAKES
  • 2½ C almond flour
  • 1 C ground freeze dried strawberries
  • 1 tsp baking soda
  • ¼ tsp salt
  • ⅔ C maple syrup
  • 5 TB coconut oil
  • 1 egg
  • 1 TB lemon juice
  • 2 tsp vanilla
  • FOR LEMON BUTTERCREAM
  • ⅔ C palm shortening
  • ⅔ C coconut cream
  • 1 C maple sugar
  • 1 tsp lemon extract
  • 1 tsp vanilla
  • zest of 1 lemon
Instructions
  1. Preheat oven to 325
  2. In a food processor, combine maple syrup, coconut oil, eggs, lemon juice, and vanilla.
  3. Pulse until frothy.
  4. Add almond flour, strawberry powder, baking soda, and salt.
  5. Blend until mixed well.
  6. Fill cupcake liners ¾ full.
  7. Bake 18 minutes, until toothpick comes out clean.
  8. Cool completely before frosting.
  9. Add maple sugar to a food processor and blend until fine.
  10. Add remaining ingredients and blend well.
  11. Transfer to a piping bag and pipe onto cupcakes.
  12. Garnish with lemon zest.
Notes
*1 TB gelatin may be used in place of eggs
