Pumpkin. Spice. Donut. Holes. Need I say more? Okay I will. Gluten Free. Yes, I know. I pretty much have my breakfast plans set for the rest of the year. A few of these babies, a slice or two of bacon, and a tall cup of joe. Perfection. I actually gave in and tried a pumpkin spice donut hole from dunkin donuts last week…..big mistake. I was very disappointed. Honestly, they do not even compare to these much healthier much tastier alternative. These puppies are so moist, with the perfect balance of spice, and they actually taste like pumpkin! And guess what. Zero frying involved.
These can be made completely paleo, or gluten free, with an optional coating of cinnamon sugar or streusel. I personally can’t decide which one I like best……I’d love to hear which is your favorite!
- 2 eggs
- 1 C coconut sugar
- ½ C coconut oil
- 1 C pumpkin puree
- 1 tsp vanilla
- 2 C gluten free baking flour
- 1½ tsp baking soda
- ½ tsp salt
- 2 tsp ground cinnamon
- ½ tsp ground nutmeg
- ½ tsp ground cloves
- preheat cakepop or donut hole maker.
- In a large mixing bowl, beat eggs and sugar.
- Add vanilla, pumpkin, and coconut oil. mix well.
- In a separate bowl, combine remaining ingredients.
- Fill each hole with a TB of batter and cook about 4 minutes, until machine stops steaming.
- Open and wait about 1 minute before removing.

- ¾ C TB tapioca flour
- 3 TB potato starch
- 1 tsp xanthan gum
- 1½ tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 2 tsp ground cinnamon
- ½ tsp ground cloves
- ½ tsp ground nutmeg
- preheat cakepop or donut hole maker.
- In a large mixing bowl, beat eggs and sugar.
- Add vanilla, pumpkin, and coconut oil. mix well.

- ¼ C butter, melted
- After donut holes are cooked, roll in melted butter, then in cinnamon sugar.
- ¼ C butter, melted
- ¼ C brown or coconut sugar
- ¼ C powdered sugar, sifted
- Mix brown sugar or coconut sugar and powdered sugar in a large dish.
- When donut holes are done cooking, roll in melted butter, then in sugar mixture.
