The smell, the taste, and even the thought of Bruschetta always brings my grandmother to mind. Her Bruschetta is the absolute BEST. I would eat it for every meal. I have many fond memories of sitting on the porch overlooking the pond enjoying my “Memere’s” homemade bruschetta, with basil picked fresh from her herb garden. She has always had a porch full of potted herbs, pineapple, and even banana trees.
Unfortunately I did not seem to inherit her green thumb. I was able to harvest just enough basil from my recently purchased potted plant….before I seemingly killed it.
At least it made one heck of a meal.
Inspired by, and dedicated to my Memere,
Bruschetta Chicken
For Two
Ingredients:
– 2 boneless chicken breasts
– 2 TB balsamic vinegar
– 2 cloves garlic, minced
– 3 firm tomatoes, seeded
– 1 C basil, chopped
– 1 tsp lemon juice
– 1 tsp olive oil
– Salt and pepper
Directions:
Rub chicken with 1 clove of minced garlic and season lightly with salt and pepper.
Add chicken and vinegar to a zip lock bag and marinate 1 hr.
Meanwhile, chop tomatoes and toss with basil, lemon juice, olive oil, and remaining garlic. Season with salt and pepper to taste. Chill until ready to use.
Heat grill pan (or grill) to medium high.
Cook chicken approximately 5 minutes each side.
Serve topped with tomato mixture.

I also have many memories of times spent together with a sweet girl with”rose bud lips”. It seems we did a lot of eating and laughing.
We sure did! I love the fact that I always associate food with memories, because our family always eats together, therefore I have TONS of great memories brought back by eating certain dishes. Peaches and cream will forever be a Memere thing. Sauerbraten is my mom, along with the BEST homemade salsa. Fresh picked figs, and homemade pizza are Aunt Wendy. I’m blessed to come from a family of great cooks!
