Homemade Paleo Ravioli and Tomato Sauce

Ever since I joyfully stumbled upon Paleo Cupboard‘s recipe for Paleo-Pasta, I have been itching to make Paleo Ravioli happen. And yesterday it finally did. And my goodness, did it hit the spot. It was pretty filling, so I got to save half of it for today’s lunch. I am pretty excited to get some more of that deliciousness in my belly. I know my daughter will be too, because she scarfed her’s down like no tomorrow.
Paleo Ravioli
Ingredients:
- 1 batch of Paleo Cupboard‘s Paleo-Pasta (uncooked)
- 1/2 lb ground beef
- 1/3 C mozzarella cheese(optional)
- 1/4 C parmesan cheese(optional)
- 1 egg
- 1 fresh basil leaf
- salt and pepper
- 1 batch of Homemade Tomato Sauce
Directions:
- in a medium skillet, brown meat, and drain.
- In food processor, combine meat, cheese, egg, and seasoning. process until smooth.
- Roll pasta and cut into 2in strips. (Be carefull not to roll too thin, or your pasta will break and the fillings will spill out.)
- Scoop 1/2 TB sized balls of meat mixture out onto half the pasta, spaced 1in apart.
- Brush remaining strips of pasta with water
- Cover the meat with remaining strips of pasta, and cut with pizza cutter.
- Boil 3 minutes, and carefully remove with slotted spoon.
Homemade Tomato Sauce
Ingredients:
- 1 tsp oil
- 1 large (28oz) can of crushed tomatoes
- 1 15oz can tomato sauce
- 1 clove garlic, minced
- 1 TB fresh basil
- salt and pepper
Directions:
- In a medium pot, heat oil over medium heat, and add garlic.
- Add tomatoes and basil, and reduce to low.
- Cook until heated through. season with salt and pepper to taste.
